Columbus Day or Any Other Holiday 15th Century Cooking with Modern Ingredients

Spice is king in making cheese and fruit lasagna the way it had been served in 1492. Here's one way to use those healthy autumn snacking apples on Columbus Day.
 Prepare a 1492 Catalunian-Italian-Spanish-style apple lasagna according to a recipe frequently used throughout Europe in 1492. Perhaps the familiar, hearty cool weather main meal probably had been eaten by Columbus or his peers throughout Northern Italy, Catalunia, and the Barcelona area of Spain.

The meal usually is prepared with apples, golden raisins, pine nuts, cinammon, figs, and cheese layered between baked lasanga noodles. It's a medieval version combining cheese lasagna layered with baked fruit and nuts. In modern times, you'll probably find this dish has moved to Southern Italy, Sicily, and Sardinia. Here's how to make it for Columbus Day. The recipe feeds a big family or a Columbus Day dinner party.

Spiced Apple Cheese Lasagna with Pignola Nuts

10 sheets of broad noodles (lasagna)

7 1/2 cups of water, vegetable stock, or chicken stock in which to boil the lasagne pasta until al dente tender

pinch of ground cardamom

pinch of ground cinannamon

pinch of white pepper

1/2 cup of pine nuts (pignola nuts) slightly browned in olive oil. If pine nuts cost too much for your budget, substitute lightly browned hulled sunflower seeds instead.

pinch of ground cloves

oil for greasing the lasagna pan

5 sliced, peeled apples

6 to 8 ounces of grated hard cheese such as Cheddar, Parmesan, Mozarella, Swiss, or any other hard cheese that melts well.

Square or oblong lasagne pan that supports three layers of pasta layered with cheese and sliced apples.

Bring the water or stock to a boil, and boil the lasagne until it's al dente tender. You can cook the pasta in three or four batches so it doesn't stick together.

Which is urs beloved recipes?

Behold, the KFC Double Down sandwich. It is, if you really want to know, two slabs of fried chicken intersliced with two pieces of bacon, two slabs of cheese, and the Colonel's “special sauce.” It comes in the form of a sandwich, with the fried chicken where the bread used to be. It's sort of hilarious. It's sort of perfect. And then it'll probably make you vomit….

Did you notice? How in one pseudo-food item, you are consuming not one, not two, but the mutated, chemically injected flesh/byproducts of fully three different distended, liquefied, industrially tortured creatures? Feel the love, pitiable animal kingdom.

You got your chicken-like creature, your pig-like creature, your dairy cow-like creature, all wrapped in a $5 fistful of nausea, ready to strangle your heart and benumb your brain. God knows what is in the “special sauce.” Maybe some sort of fish byproduct, just to round it all out. It's like a wild kingdom in your mouth! It's like a toxic zoo in your colon! It's like a suicide note from left of your brain! “If you eat this, you are a complete and total idiot, and we're through. Signed, You.”

Let us now add a shred of wary perspective. For well do I know this horrible crapbucket of chyme joins a very long of fast-food nightmares you should never put anywhere near your mouth, unless you deeply hate yourself and give a damn anymore, and you want to die fat and stupid and smelling like that rotting thing you found in your rain gutter.

What's more, some fast food companies are trying, at least a little, to respond to the call for slightly healthier foods, adding salads and fruit and grilled chicken breasts to their menus, even though every single one of those items is just as jammed with chemicals, preservatives, synthetic flavorings and high-fructose corn syrup as the rest, and all the “healthy” meat products are still raised on the most execrable, environmentally rapacious industrial feedlots imaginable. But hey, it's something, right?

Further, some argue that it's a bit disingenuous to blame the junk food purveyors for all the obesity, cancer, impotence, bad skin and colonic pain in the land. After all, the undereducated masses love to eat this garbage, right? KFC test-marketed this Double Down death bomb for months, to (presumably) great effect.

Of course, it's sort of a foregone conclusion, a rigged game. This vile meatwich is crammed like a grenade with sodium, sugar, fat and chemicals. Ergo, the testers, presumably people with taste buds devastated by years of cramming similar compost into their guts, thought it was pure nirvana. And then their colons exploded.

Had KFC actually tested it on people who eat real food every day, folk who touched fast food in years, whose systems are strong and fully recovered and in whose bodies blood flows unobstructed, had KFC dared any genuinely healthy human to take a bite, you can bet they would have heard, and smelled, a slightly different reaction.

Maybe it's all a silly, futile argument, a fool's game to point up the obvious evil of such products. These items are legion. They just keep right on coming. more, it's just capitalism at work. It's about giving the people what they want, right?

And if they really want it — if, deep down, most humans sense this garbage is hugely unhealthy, that it's a form of slow poison and there are far and wiser options out there — well, you do what companies like KFC, Coca-Cola, Kraft, McDonald's and all the rest have done since the dawn of the free market.

You convince the less educated and the gullible that they are wrong, that this crap is actually a good value for your family, nutritious and safe to feed to children, even as you manufacture all the flavors, smells and meat-like textures in a giant lab and sell truckloads of the crap to the poorer classes, until they get fat and sick and die. Meanwhile, you employ adorable cartoon characters and bright, funny mascots to lure in the next generation, to keep the cycle going.

Do I have that about right, Mr. KFC exec? Did I miss anything? Can you hear me down there, what with all the flames and the screaming?

A recent issue of a US Department of Agriculture publication includes an examination of how America’s food choices have changed over the past one hundred years. As you can see from one of the charts provided in the article, we’re eating a lot more chicken. The authors explain why:

Chicken availability over the past 100 years illustrates the effects of new technologies and product development. Increased chicken availability from 10.4 pounds per person in 1909 to 58.8 pounds in 2008 reflects the industry’s development of lower cost, meaty broilers in the 1940s and later, ready-to cook products, such as boneless breasts and chicken nuggets, as well as ready-to-eat products, such as pre-cooked chicken strips to toss in salads or pasta dishes.

Broilers were first marketed in the 1920s as a specialty item for restaurants. By the mid-1950s, innovations in breeding, mass production, and processing had made chicken more plentiful, affordable, and convenient for the dining-out market and for cooking at home. Media coverage of health concerns associated with total fat, saturated fat, and cholesterol in the last quarter of the 1900s may have contributed to a rise in chicken tacos and turkey burgers.

Visit with Takami's family
Takami's mom, Hiroko, her sister-in-law, Misae, and Misae's children Yoshi and Hiro, came from Japan for a visit so that they could see Pittsburgh before Takami moves home. We went over and I taught everyone how to make Pittsburgh-style pierogies.

She had told me that at first, she thought people had put chairs out in case people got tired of walking in the snow so that they'd have a place to sit.   Lori caught 2 coyotes getting close in the back yard.  The dogs were baring away, but the coyotes seemed to know that the dogs wouldn't go beyond the “Invisible Fence”, and didn't seem too concerned, which is a little troubling.  They back off with humans around though.  The coyotes parked themselves a hundred yards away and watched Teddy guard his terrain.  Interestingly, when we let Max out, who isn't constrained by the fence, and when he when down into the valley behind the house, the coyotes got up quick and took off.  Max isn't inclined to go chasing after them, so things seem comfortable enough as it is.

I absolutely adore this family!!  We met up at Lake Sacajawea (a favorite location of mine) and had a family photo session for them.

I was so incredibly happy that we had the session on a day when the weather was perfect. Like right now it’s 60 degrees outside and sunny!

Oh how I’ve missed this beautiful weather. I can’t wait until I can start doing most of my sessions outside!!!
